These sessions are designed to help you learn how to cook real food from scratch using simple ingredients, practical techniques, and a clear system you can use at home.

This is not a challenge or a short program.

These classes are for people who want to understand cooking, feel confident in the kitchen, and learn how to eat well consistently.

You can join from anywhere and cook along live.

WEEK 1

Fresh Vietnamese-Style Soy Curl Spring Rolls

Learn to build fresh, vibrant spring rolls filled with crisp vegetables, herbs, rice noodles, and savory soy curls. We'll also prepare a light dipping sauce that ties every bite together for an easy, refreshing summer meal.
WEEK 2

Soy Curl Stir Fry

Master quick, weeknight-friendly cooking by combining colorful vegetables, homemade stir-fry sauce, and tender soy curls. This class focuses on simple techniques that help you build bold flavor using everyday pantry ingredients.
WEEK 3

Mediterranean Soy Curl Bowl

Finish the month by creating a nourishing Mediterranean-inspired bowl layered with wholesome grains, fresh vegetables, vibrant herbs, creamy sauces, and perfectly seasoned soy curls. Learn how to build balanced, flavorful bowls that are ideal for meal prep or everyday lunches.

Learn how the classes work, who they’re for, and how support is built around you.

How the virtual classes work

All classes are live and interactive.

Before each class you will receive:

  • Ingredient list

  • Preparation notes

  • Simple instructions to get ready

During the class we cook together step by step. You can ask questions, adjust ingredients, and learn the technique in real time.

You can join one session, continue monthly, or choose more support depending on what you need.

These classes are for you if:

  • You want to learn how to cook plant-based food from scratch

  • You feel stuck cooking the same meals

  • You want to eat healthier but do not know where to start

  • You want guidance from a life-long plant-based chef

  • You want structure without a strict diet

No experience is needed. You only need a kitchen and willingness to learn.

Some students prefer occasional classes. Some want more structure and consistency. You can choose the level of support that works for you.

Support may include:

Virtual group classes take place on scheduled days each month.

  • Live Group Classes on Tuesday at 6 PM MST/ 5 PM PST/ 8 PM EST

  • Classes are held in a group format and you can cook along from your own kitchen

  • Single sessions are available by appointment only

  • Limited weekday morning and select evening availability

Start cooking with Chef Vasta

As a plant-based chef and culinary educator, Chef Vasta teaches how to cook simple, nourishing food from scratch using real ingredients and practical techniques.

She grew up in Rwanda cooking family meals without processed foods or shortcuts, and today she shares those same skills through virtual classes and in person classes in Denver, helping students feel confident in the kitchen and make plant-based eating part of their everyday life.
